Apple Waffles

I made this recipe for the first time today and fell in love! It is quite easy, and makes a fun twist on the standard breakfast waffle. If you are serving this as part of a breakfast--with things like meat and eggs or fruit--these waffles are quite dense, and 2 waffles* per person should be plenty.
Peel and grate 2 apples (I used Gala)

Add to:
6 Tbsp margerine or butter
1 1/2 c. sugar
2 Tbsp vanilla
4 eggs
4 c flour
1/2 c. milk

The batter will be very thick. Depending on your griddle, you may need to use cooking spray. I didn't on mine. Place about 1/2-3/4 c. batter on waffle iron, depending on size of iron. Close griddle and cook for about 3-5 minutes (mine were done after 2 1/2 on my iron). Cool a little and serve.

* This recipe yields about 12, 4"-square waffles.
** Wonderful with Apple Syrup
*** The original recipe called for 1 1/2 c butter, I thought that was too much and cut it to the 6 Tbsp. listed. They turned out perfectly.

Apple Syrup

We have usually had this syrup on crepes, waffles or pancakes, they are especially great on Apple Waffles. I also think it could be fantastic as a topping to ice cream, or some type of bread pudding, apple or spice cake.

Combine in a sauce pan:
2 Tbsp lemon juice
2 c. apple juice or cider

Add:
1 c sugar
2 tsp cinnamon
2 Tbsp cornstarch

Combine well and bring to a boil. Once boiling, turn heat down and simmer 2-3 minutes, stirring occasionally. Remove from heat and add:

1/4 c. butter
Stir until melted.

**You can also substitute the apple juice for any other fruit juice of your choice...cranberry, orange--my mouth is starting to water...enjoy!

The Best Chili, Ever

I have never been a big fan of home-made chili. And still to this day, this is the only one I like. But more than liking this chili...I absolutely love it. And don't be afraid of the cinnamon in here, it makes it just perfect! (And don't fret about the chili powder, it only makes it flavorful, not spicy. I know, I can't eat spicy foods!)

1 1/2 lbs beef or pork (or a combo of both), cooked
1 c green pepper, chopped (about 1 pepper)
1 c onion, chopped (1 medium onion)
2 15 oz cans kidney beans, drained
1 28 oz can chopped tomatoes, undrained
1 15 oz can tomato sauce
1 1/2 c water
2 Tbsp chili powder
2 Tbsp worchestershire sauce
1 Tbsp honey
1 tsp salt
1/2 tsp dried basil
1/2 tsp cinnamon
1/4 tsp ground allspice
1 lg bay leaf
1/4 c brown sugar

Combine all ingredients and simmer for 30 minutes covered, or 1 hour uncovered. Remove bay leaf and serve.

* We like to use all pork, or a combination of pork and beef
