Sweet Cinnamon Popcorn

This has become one of my new favorite treats :o)
Pop 1 cup un-popped kernals.  Set aside.

1 c. butter
1 1/3 c. sugar
1/2 c. Karo syrup

Bring these ingredients to a boil over medium heat, and let bubble hard for 1 minute. Pull off heat and add:

1/2 tsp. baking soda
1/4 tsp. salt
red food coloring (less red = pinkish, more red = redder)
2 tsp. cinnamon extract
(cinnamon oil if you want a hotter cinnamon flavor rather than a sweeter cinnamon flavor)

Stir together well and pour over popped popcorn in a  large Tupperware. Stir until combined. Grease 2 cookie sheets and spread the popcorn between the two sheets. Bake the popcorn at 250 degrees for 30 minutes--stirring half way through cooking. Take out of the oven and break.

(This recipe can also be used for Caramel Popcorn. Just substitute the white sugar for brown sugar and the cinnamon extract for vanilla. Prepare the same way.)
