Cream Cheese Jello Salad

This is my favorite jello salad...so smooth, and so yummy!

1 cup water
1 lg, or 2 small sugar free strawberry jello
8 oz pkg cream cheese (low-fat is okay), softened
1 container frozen sweetened strawberries, chopped (about 2 cups)
1 reg. sized can crushed pineapple, undrained
2 8oz cartons coolwhip, thawed

Boil water, put in blender and turn on low. Sprinkle the jello powder in the blender. Blend till dissolved, using rubber spatula to clean undissolved jello from sides of blender. Add cream cheese and blend till smooth. Pour all of this into a large bowl (metal is best). Add frozen strawberries and pineapple and stir till completely combined.

Put in fridge to cool, stirring a couple of times for the first little while till it is the consistency of egg whites. Watch carefully so that it doesn't set up firm. Add the 2 cartons of cool whip by folding in gently. Pour into 9x13 pan or dish. Cover and shill till completely set up. Serve and enjoy!
