So wonderful!
3 c all purpose flour
1/4 tsp yeast
1 3/4 tsp salt
1 1/2 c water, warm
seasoning or herbs--about 1 1/2 tsp
In a lg bowl combine all ingredients together till blended well. (The dough eill be sticky and shaggy looking.) Cover with tin foil or wrap and let sit overnight (12-18 hrs) till bubbly. Place dough on a lightly floured surface an sprinkle with a little more flour. Fold dough under itself until it is a semi-smooth dough ball. let sit 1-2 hours. In the meantime, preheat the oven to 450. Place a cast iron dutch oven in the oven for 20 min, so it is nice and hot. Take the dutch oven out (do not spray it) and lift dough into hot pan. Place lid on and bake for 30 min. Remove lid and bake 15-30 min more, until browned. Let cool for 10 minutes in pan and then remove to wire rack.
Note: this bread can be frozen as soon as it cools
