Soft Sugar Cookies

These very thick and soft cookies are a holiday favorite. Many plates of treats for neighbors have included these cookies!

1/2 c shortening
1/2 c butter
2 c sugar
2 eggs
1 can evaporated milk
1 tsp vanilla
1/2 tsp lemon extract (can use almond instead)
1/2 tsp salt
1/2 tsp bkg soda
4 tsp bkg powder
5 1/2-7 c flour (+more if needed)

Cream first 3 ingredients. Add eggs, milk and vanilla and mix. Add the rest of the ing. in order (when you get to the flour add 1 cup at a time to the 5 c. mark, then add more as needed, by 1/2 cup). The dough should be very soft. Roll on a 'Pamed' or floured surface to about 1/2" in thickness. Cut with cookie cutters and bake at 35o for 12 minutes. Cool and frost. I like to use the Glazed Frosting.

Note: You can freeze these, before frosting, up to a 1/2-1 month or so.
